Indonesian Exotic Food Processing
This specialization is designed for students who have an interest in studying the technology for utilizing exotic Indonesian food ingredients into value-added derivative products that can replace imported food ingredients. Derived food products that will be studied include starch, protein, and functional food ingredients such as vitamins and antioxidants. This specialization will also study the potential of palm oil as one of Indonesia's main commodities for producing various derivative food products. Drying technology as one of the main technologies for processing Indonesian exotic materials will also be studied.
